How to get rid of summer squash
Make empanada style - spiced vegetable pattiesput on a favorite cd, first to chill while you cook.

Try to use fresh veggies, fresh is best!

1 frozen pkg. of goya empanada discos or make the turnover annotto dough yourself [thaw first] [contains no lard]

[12 ingredients]a little olive oil to sauté the following ingredients in...
2 summer squash finely cubed [ generic yellow or zucchini]
1 white onion dice
chopped scallion
1 large tomato from garden diced
add a few chopped fresh button mushroom
add chopped garlic
add 1 chopped seeded scotch bonnet pepper
add spices - a pinch of allspice, black pepper, and cumin.
at last minute add 1/2 cup morningstar farms crumblers [ground beef style]
2 tablespoons of breadcrumbs
add 3 tablespoon of goya sofrito paste [it's like tomato paste with green peppers]
add chopped fresh cilantro
prepare counter/cooking surface for clean orderly quick assembly line empanada production with the bowl of sauté squash mixture
1/2 cup of water
and pastry brush to trace on semi circle end of empanada lid with little bit of water before sealing & fork crimping.
prepare as usual when you finished the 10 disc, place on greased pan & bake
at 350 or 15 minutes or deep fry 3 to 4 at a time & drain on paper towel
empanadas [the horno type] often had chopped boiled eggs & chopped black olives in them - [& raisins which is fine with daughter of a bajan, Mom like me]
This is a variation using the available garden bounty of this season. peace
What's next? Perhaps some good choka & roti or eggplant parmesan ~ to get rid of some of the eggplant in the garden!

squash boats hollow out the squash [saving the scooped mixture]
prepare filling as above
when done scoop back into squash boats
and sprinkle tops with little grated mexican cheese.[like asiago] or shredded mexican taco style cheese
bake in foil [loose] tent covering the pan in a water bath
[ a smaller pan set inside a larger pan half filled with water] @ 400 for 20 minutes and serve.
[works with eggplant very well too]
