How to get rid of summer squash Grin


Make empanada style - spiced vegetable patties
put on a favorite cd, first to chill while you cook. Smiley

Try to use fresh veggies, fresh is best! Wink

1 frozen pkg. of goya empanada discos or make the turnover annotto dough yourself  [thaw first] [contains no lard]

i made a mistake and grabbed the smaller sized disc, I see
on the website they do make a larger disc. Each disc
layer is separated by wax paper. [in the frozen dept.]
of  your grocer.

[12 ingredients]

a little olive oil  to sauté the following ingredients in...

2 summer squash finely cubed [ generic yellow or zucchini]
1 white onion dice
chopped scallion
1 large tomato from garden diced
add a few chopped  fresh button mushroom
add chopped garlic
add 1 chopped seeded scotch bonnet pepper
add spices - a pinch of  allspice, black pepper, and cumin.

at last minute add 1/2 cup morningstar farms crumblers [ground beef style]
2 tablespoons of breadcrumbs
add 3 tablespoon of goya sofrito paste [it's like tomato paste with green peppers]
add chopped fresh cilantro

prepare counter/cooking surface for clean orderly  quick assembly line  empanada production

with the  bowl of sauté squash mixture

1/2 cup of water

and pastry brush to trace on semi circle end of  empanada lid with little bit of water before sealing &  fork crimping.

prepare as usual when you finished the 10 disc, place on greased pan & bake
at 350  or 15 minutes or deep fry 3 to 4 at a time & drain on paper towel

empanadas [the horno type] often had chopped boiled eggs & chopped black olives in them - [& raisins which is fine with daughter of a bajan, Mom like me]

This is a variation using the available garden bounty of this season. peace

What's next? Perhaps some good choka & roti or eggplant parmesan ~  to get rid of some of the eggplant in the garden!

or

squash boats

hollow out the squash [saving the scooped mixture]

prepare filling as above

when done scoop back into squash boats
and sprinkle tops with little grated mexican cheese.[like asiago] or shredded mexican taco style cheese
bake in foil [loose]  tent covering the pan in a water bath
[ a smaller pan set inside a larger pan half filled with water] @ 400 for 20 minutes and serve.

[works with eggplant very well too] Wink peace nyao

update

The second batch, of fried empanadas are [the bomb!] Grin

cooking is kinda like art ...dang?Cheesy

They turned out even better than the first batch of [baked]
style. I will serve them with tamarind chutney & sour cream.
[to cool them down]

description:

light, not heavy like
a cornish pastry,
more like a flavorful diced r-r-r-ratatouille in flaky crust.
[squash is so lo- fat]      

If you don't have a chutney to accompany them, add
1 tsp. of brown sugar to the squash mixture when preparing filling.

There's only 3 patties left out of  a total  20 and that's shameless!
[Thanks to My Hubby/ Brother in Law & Moi]
but it's like original fast food, i'll grab 2 patties wrap in a napkin, shake some matouks on them and go, roll out!
But the men take over with espn & pillage the patties.

My Husband calls them "mini me" patties -  He does not like them that small! Shocked complaining about their tiny size.

I just told him, I used  the pre-made empanada pastry disks.  Grin  I'll buy the larger sized disks/discos for my cabbage, celery /carrot patties this week. [i will stock up on the disks & freeze them]

They're all gone, here. Embarrassed
Those patties went during the all-star game last night
with the spiced cold sarsaparilla tea.[that's gone too]   

They sat eating them like canapes & hors d'oeuvres while
waiting for dinner to get on the table.
Temperatures are steadily rising here,  Shocked so I better get
on the ball & make a jug of gingerbeer or more  sarsaparilla, when i get home.

[true, but it  balances out]  Grin He provides the weekend Brunch dates & dinner dates @ our favorite local spots &  He will often ring me up  to bring My  Lunch  to work [anything I desire] on gp , with a smile & a very sinfully rich surprise dessert [his doing]. like i'm going to turn all of His pampering & spoiling  down? easy vegetable patties


If there's a game coming on ----
Take a shortcut, or you don't want to be bothered? 
Get the goya empanadas discos [10  circular sheets of pattie pastry already made & frozen] in a package.
[come in small & regular size]

Chop and fry a large white onion &  1 tsp ginger paste in a little oil
At the last minute add chopped garlic. [you don't want to burn the garlic, it will turn  it bitter]

Then  Fry up the cabbage in a little butter or oil [ i took a shortcut  & used the bagged  organic coleslaw mix - there's carrot & 2 kinds of  cabbage in that mixture]
add more shredded carrots if you like.

Saute' add 1/3 cup chopped celery stalk , 1 finely chopped turnip root, or eddoe  & 1 diced sweet red bell pepper, add chopped scallion , 1 large  seeded & chopped scotch bonnet pepper, a pinch  allspice. [chopped parsley or top of celery leaves]

Cook for a while  on medium flame ..[like 12 minutes] then add 1/3 cup of vegetable maggi bouillon whisked with 1/2  tsp of cornstarch mixed in as thickener -  add salt & pepper Cook until vegetables are tender & liquid is pretty much absorbed.

Then cool & set up counter for rapid pattie production

Spoon the cabbage mixture into the center of the discos
- do not over fill the patties ...[finish off & prepare just like the zucchini patties [recipe above]

Wet  the edge of the semi circle with a little water, fold & crimp the edges  with a fork and put aside, until you have enough to fry in oil [like deep fry them until golden brown]
do them in batches of 5 or 6 at a time, turning to cook thoroughly.

Drain patties on paper towels and serve them, later plain or  with your favorite condiments. [like matouks or  chutney]

The cabbage patties, are really very, very  good!  8)
i made 20 yesterday after work & there's No more left
[we had guests] They were all  gone by the time the game was over with . ~ peace nyao Wink

Save half of the  uncooked chopped zucchini  & chopped tomato mixture - and add it  to pot after the base has cooked - then fill patties before frying .



an easy clean up tip *


When making a huge batch of patties, just
line the cooking island, counter  or pattie  preparation surface with wax paper [from the roll]
You'll have the easiest cleanup in the world! simply toss
wax paper in the trash when done & wipe counter down with soapy water . ~peace nyao --  the game night pattie maker Wink .

for another  variation -  Cool

i made spinach & feta empanadas
using the frozen goya discos --

Only they consisted of cooked drained spinach, scallion, chopped fried onion, a few drops lemon juice, nutmeg, crushed red pepper , black pepper , cumin , garlic [spices] and crumbled feta cheese, delicious!
i may put chopped black olives in them next time.
They are history, now. They tore them up!
