fermented fish sauce) dried shrimp &

add salt radish ( hua pak kad khem0
or a shredded scrambled egg.

I sometimes add palm sugar, rice wine vinegar,
tamarind paste , if you add tamarind go easy on  
adding lime juice or just use the lime to spritz & garnish,
use chantaboon rice noodles,  
shredded carrots  & cucumber , or grape  tomatoes to
our version (everybody into the pool-stylee
 
I definitely add red pepper flakes or thai bird/ or
diced chili peppers , because We like it HOT. Grin)  
 
there are a few versions of this  
in my blog's archives, I seldom make it
the same way twice.

 
for extra green to garnish add
one of the following -  mint, thai basil or cilantro!

t'is the season, for Squash! ( calabazas)  
I loke to use use them in  
stir fries,  cheese au gratin baked dishes
& Soups !  Smiley... i like some of the stuffed
squash the blossoms too.

You can bet your money on a bowl of greens. It doesn't matter whether you are serving collards simmered with garlic and red pepper flakes, or mixed greens brimming with ginger, you will end up with a winner.
 
Years ago, "greens" were associated with down-home cooking of the South, but now they are enjoyed with gusto across the country. And for good reason: Leafy vegetables are full of vitamins, minerals and fiber, and low in calories. And can pack a world of flavors.
 
Today, supermarkets and farmers markets almost everywhere offer collards, mustard greens, turnip greens, kale, dandelion greens, spinach, chard, broccoli raab and bok choy. You can always find cabbage, a member of the collard greens family.

Personally I'm starting to really
dislike kale, because imho
it's a wimpy lackluster "safe" often bland vegetable. The only way, I'll eat kale is, if it's mixed with another type. I've been vegetarian for decades now, so I don't throw a pigtail in the pot. I like to add liguid smoke instead to suit
My Family's taste!  Grin
 
Every time you visit certain "local mainstream"  health conscious or  
vegetarian eateries, They will try to  
"kale you to death" & shove  
bowls of  freakin nondescript  versions of  kale down your throat, as if the only acceptable "politically correct" banal version of  "greens"  out there, while ignoring the many others nutritious varieties!  
 
When eating out? We'll usually choose collards,
dasheen, cabbage, pak choy  or  spinach
callaloo over kale, every time ! ( My Husband, Children & I )  
dandelion greens can be cool too !  
 
Collards seem to  have more ooomph & bite, it's complex and it has lots of interesting
recipes lore in the African Caribbean & Ethnic communities of the world  !  
 
When making mustard & turnips (they have a complex  bite & more "oomph" too)
add a bit of the chopped turnip root while you're
cooking, add a few cornmeal dumplings
near the end of cooking time and it's seriously on !
 
or add a cornmeal style version of  
the brazilian" farofa " on the top
or a baked cornbread style crust , that you
cook on top of the greens for  
a few minutes in the oven . ~ peace nyao  Wink
