Easy Vegetarian Pad Thai Noodles

[ variations of noodle recipe with meat!

add tamarind paste*
meat eaters can add ( nam pla or nuoc mam
fermented fish sauce) dried shrimp &
one of the following proteins  (1) shredded pork,
(2)chicken or (3) cooked shrimp to this general recipe.

add salt radish ( hua pak kad khem0
or a shredded scrambled egg.

my variation
I sometimes add palm sugar, rice wine vinegar,
tamarind paste , if you add tamarind go easy on
adding lime juice or just use the lime to spritz & garnish,
use chantaboon rice noodles,
shredded carrots  & cucumber , or grape  tomatoes to
our version (everybody into the pool-stylee

I definitely add red pepper flakes or thai bird/ or
diced chili peppers , because We like it HOT. Grin)

there are a few versions of this
in my blog's archives, I seldom make it
the same way twice.


for extra green to garnish add
one of the following -  mint, thai basil or cilantro!

t'is the season, for Squash! ( calabazas)
I loke to use use them in
stir fries,  cheese au gratin baked dishes
& Soups !  Smiley... i like some of the stuffed
squash the blossoms too.

You can bet your money on a bowl of greens. It doesn't matter whether you are serving collards simmered with garlic and red pepper flakes, or mixed greens brimming with ginger, you will end up with a winner.

Years ago, "greens" were associated with down-home cooking of the South, but now they are enjoyed with gusto across the country. And for good reason: Leafy vegetables are full of vitamins, minerals and fiber, and low in calories. And can pack a world of flavors.

Today, supermarkets and farmers markets almost everywhere offer collards, mustard greens, turnip greens, kale, dandelion greens, spinach, chard, broccoli raab and bok choy. You can always find cabbage, a member of the collard greens family.

Personally I'm starting to really
dislike kale, because imho
it's a wimpy lackluster "safe" often bland vegetable. The only way, I'll eat kale is, if it's mixed with another type. I've been vegetarian for decades now, so I don't throw a pigtail in the pot. I like to add liguid smoke instead to suit
My Family's taste!  Grin

Every time you visit certain "local mainstream"  health conscious or 
vegetarian eateries, They will try to
"kale you to death" & shove
bowls of  freakin nondescript  versions of  kale down your throat, as if the only acceptable "politically correct" banal version of  "greens"  out there, while ignoring the many others nutritious varieties! 

When eating out? We'll usually choose collards,
dasheen, cabbage, pak choy  or  spinach
callaloo over kale, every time ! ( My Husband, Children & I )
dandelion greens can be cool too !

Collards
seem to  have more ooomph & bite, it's complex and it has lots of interesting
recipes lore in the African Caribbean & Ethnic communities of the world  !

When making mustard & turnips (they have a complex  bite & more "oomph" too)
add a bit of the chopped turnip root while you're
cooking, add a few cornmeal dumplings
near the end of cooking time and it's seriously on !

or add a cornmeal style version of 
the brazilian" farofa " on the top
or a baked cornbread style crust , that you
cook on top of the greens for
a few minutes in the oven . ~ peace nyao  Wink

warm spiced sweet potato salad

add shredded carrots
cubed cooked sweet potato
channa peas, thin sliced red onion rings
( or scallion- add one or the other/ but not both)

add chopped ripe tomatoes
( or grape tomatoes)  on a torn lettuce
base

make a yogurt & honey based sauce
add raisins & walnuts
a tiny bit of fresh chopped fresh mint leaves,

Season the sauce to taste, with a
pinch of tea masala spice & drizzle on
finished salad!

It`s All About Jerk For Caribbean Chef

CaribWorldNews, MIAMI, FL, Fri. Nov. 6, 2009: Caribbean-born Chef Helen Willinsky developed an interest in the tropical fruits and vegetables used in the region`s flavorful cuisine at an early age and this weekend she will share her take at the  8th Annual Grace Jamaican Jerk Festival gets underway on November 8 at Markham Park in South Florida..

Growing up in Jamaica, a former British colony, Willinsky says she always thought that British cooking was `pretty dull` and so she turned to local products to create one-of-a-kind tastes that are delicious, interesting and perfectly balanced.

After completing high school in Kingston, Jamaica, Willinsky trained at the Ecole Hoteliere in Lausanne, Switzerland. She spent several years cooking professionally in Europe before returning home. In 1978 she emigrated to the United States bringing the secrets of the island recipes with her and founded Helen`s Tropical-Exotics.

string beans, cauliflower, zucchini]
with a batter /tempura made with
spices &  channa or white rice flour.

Spice Compounds May Stem Tumor Growth
FRIDAY, Dec. 11 (HealthDay News) -- Compounds derived from two spices -- pepper and turmeric -- could help prevent breast cancer by limiting the growth of stem cells that promote tumor growth, a new study shows.
When curcumin (from turmeric) and piperine (from black peppers) were applied to breast cells in the laboratory, the number of stem cells decreased, but there was no change in normal cells, say researchers at the University of Michigan Comprehensive Cancer Center.

The study appears online in the journal Breast Cancer Research and Treatment.

"If we can limit the number of stem cells, we can limit the number of cells with potential to form tumors," the study's lead author, Dr. Madhuri Kakarala, a clinical lecturer in internal medicine at Michigan's medical school and a research investigator at the VA Ann Arbor Healthcare System, said in a university news release.

The researchers indicated that the finding that curcumin and piperine are effective against stem cells but not toxic to normal breast tissue has important implications for women.
